Healthy Gluten-Free Energy Balls with Oats and Almond Butter

This recipe got its name when I made them for a birthday party at the office, and someone said, “Wow, these are just like little balls of joy!”

I enjoy storing my treats in the freezer so they stay fresh until I just need that little nibble of deliciousness after a meal or in the middle of the afternoon.

What’s the secret ingredient to crunch? Rice Krispies! My kids once had a cookie recipe that included crisped rice, and they were just delicious. I encourage you to add crisped rice to your next batch of cookies. You won’t be sad.

Prep Time 10 minutes

Makes 12 balls

Ingredients

1 cup gluten-free old-fashioned oats

⅓ cup crisped rice cereal

⅓ cup unsweetened coconut (flakes or shredded)

½ cup almond butter

½ cup ground flaxseed

¼ cup raw honey or maple syrup

1 tablespoon chia seeds

1 tablespoon sunflower seeds

1 teaspoon vanilla extract

Directions

  1. Stir all ingredients in a medium bowl until thoroughly combined.

  2. Cover and let chill in the fridge for 30 minutes. 

  3. Once chilled, roll into balls (approximately 2 tablespoons or so)

  4. Store in airtight container and keep refrigerated for up to 1 week or freezer for 1-2 months.
